Ingredients

  • 1 (1-1/2-pound) Romaine Lettuce
  • 1 (10-1/2-ounce) Cherry tomatoes
  • 1 avocado
  • 1 English cucumber
  • 1 small red onion
  • 1 (15-1/4-ounce) red beans
  • 1 (15-1/4-ounce) sweet corn
  • 1 bell pepper
  • 1 (10-1/2-ounce) black olives
  • 1 fresh cilantro
  1. Combine all the Dressing ingredients in a small bowl, stir to combine and set aside.

  2. Combine all the salad ingredients except cheese in a large bowl.

  3. Add dressing and toss to combine

  4. Garnish with cotija cheese on top and serve.
