Italian Fish Salad

Ingredients

  • 1 pound dried salt cod or Bacala
  • 1 pound small shirimp (not popcorn) cooked and cut up
  • 1 pound squid cleaned and cut into small pieces
  • 1 small can of sliced olives drained
  • 1 whole head of garlic minced
  • Juice of 1 lemon
  • Olive oil

Instructions

Soak the Bacala for two days changing water 2 or 3 times a day to remove salt and soften. After final rinse, dry it and, using your fingers, flake the fish. Boil the squid for only a couple of minutes. You may be able to buy the squid already cleaned and in rings. This is okay if you don't want the tentacles. Mix everything together and add salt and pepper to taste. Olive oil is a must. Use just enough to blend all the flavors.
