Heavenly Lime Salad
This cool lime salad is a delicious combination of cream cheese, lime gelatin, pineapple and marshmallows. This is a terrific recipe to bring to a potluck or serve at a summer cookout.
Ingredients
- 2 small or 1 large package lime gelatin
- 2 cup boiling water
- 8 ounce package cream cheese, softened
- 18 large marshmallows
- 1/4 cup boiling water
- 1 1/2 cup cold water
- 1/2 cup whipping cream, whipped
- 1 #2 can crushed pineapple
- 1 cup chopped pecans or walnuts (optional)
Instructions
- Dissolve the gelatin in 2 cups boiling water in large mixing bowl.
- Mash cream cheese in small bowl; add hot gelatin mixture and stir until dissolved.
- Melt marshmallows in 1/4 cup boiling water in top of double boiler and add gelatin mixture. Add 1 1/2 cups cold water; add whipped cream and beat mixture until it is smooth. Add pineapple and, if desired, nuts. Pour into greased mold, large baking dish, or individual molds and chill until set.
