Cannellini Salad

If you need a quick, easy, and healthy side dish, try this Cannellini Salad. Bursting with Mediterranean flavors, it's guilt-free and can even make a great lunch salad. Salad recipes have never been this good.

Ingredients

  • 2 can cannellini beans, rinsed and drained
  • 5 ounce cherry tomatoes, halved
  • 1/2 cup kalmata olives, halved
  • 1/4 cup olive oil
  • 1/8 cup fresh lime juice
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 clove of garlic, minced

Instructions

  1. Place first 3 ingredients in a bowl.
     
  2. Whisk together last 5 ingredients in a small dish, and pour over the beans.
     
  3. Toss and refrigerate for at least an hour prior to serving.
