Bacon Bananas with Salad

Ingredients

  • 6 tomatoes
  • 2 oranges, peeled
  • 2 small onions, finely chopped
  • mustard
  • freshly ground black pepper
  • 6 thin slices of lean bacon
  • 3 Tbsp butter
  • lettuce
  • 6 firm bananas
  • 6 Tbsp French Salad Dressing (below)

Instructions

Slice the tomatoes, chop the orange flesh into small pieces and add, with the finely chopped onions to the tomatoes. Pour over the French Dressing and set aside. Arrange the salad on a serving dish with the lettuce leaves. Peel the bananas and brush them with mustard, sprinkle with salt and pepper, then wrap them in the bacon slices. Melt the butter in a frying pan and brown the bananas gently on all sides in the hot butter. Serve with the salad. French Salad Dressing 1 egg 1/2 cup oil 1/4 cup vinegar 1 tsp mustard salt and pepper 1 Tbsp boiling water Beat the egg, add mustard, salt and pepper. Gradually the oil and vinegar alternately, beating all the time. Lastly, add 1 Tbsp boiling water. Beat well.
