Asian Pear Waldorf Salad

Ingredients

  • 1/2 cup water
  • 2 Tbsp fresh lemon juice
  • 2 firm ripe pears
  • 2 Asian pears
  • 2 ribs celery, sliced
  • 2 carrots, peeled and diced
  • 1 cup walnut halves
  • 1 cup golden raisins
  • 2 3/4 cup Creamy Lime Dressing (below)
  • 1 Tbsp fresh chopped mint leaves
  • 2 Tbsp shelled sunflower seeds

Instructions

Mix water and lemon juice in large bowl. Chop pears into 1/2 inch pieces, toss in lemon/water and leave for 10 minutes. Drain and pat dry. Place in mixing bowl. Add celery, carrots, walnuts and raisins. Toss with lime dressing, cover and refrigerate for 1 hour. Before serving, mix well and prinkle with the mint and sunflower seeds. Serves 10-12 Creamy Lime dressing 5 Tbsp fresh lime juice 2 eggs 2 Tbsp Dijon mustard 1 cup corn oil 1 cup light olive oil Grated zest of 2 limes Freshly ground pepper to taste Place the lime juice, eggs and mustar in food processor, process 15 seconds. With motor running, slowly pour oils and process until mayonaise has thinckened. Transfer to bowl and fold in lime zest and pepper. Cover and refrigerate until use. 2 1/2 cups
