Japanese Ume Dressing

Ingredients

  • 1/4 cup chopped onion
  • 1 T sesame seeds, roasted lightly
  • 1 T chopped ginger
  • 1 T to 2 T minced umeboshi or neri-ume (in a jar)
  • 1/2 cup oil
  • 1/4 cup rice vinegar
  • 1 1/2 tsp lemon or lime juice (optional)
  • 1 to 1 1/2 tsp sugar
  • 1 tsp salt
  • pepper to taste

Instructions

Mix in a blender for 30 seconds.
