Veggie Rice

Ingredients

  • 2 cup uncooked rice (Kokuho Rose)
  • 1 cup chopped bell peppers
  • 1 cup small broccoli florets
  • 1 cup frozen mixed vegetables, thawed
  • 1/2 cup chopped spinach
  • 1/4 cup soy sauce or to taste
  • Enough olive oil to saute the vegetables

Instructions

Cook the rice according to the directions on the package. While the rice is cooking, get vegetables chopped. When the rice is done, put the oil in a good 10 inch fry pan. Add the vegetables and saute for just long enough to get them hot. Place the rice in a big bowl, then add the vegetables on top. Pour soy sauce over top and, if you like, more olive oil to taste. Mix gently till the rice and vegetables are evenly mixed. Serve hot with good french bread.
