Sizzling Savoury Rice

Ingredients

  • 1 Tbsp oil
  • 1 onion,chopped
  • 420g can chopped tomatoes
  • 1 tsp chicken stock powder
  • salt and pepper
  • 1/4 tsp sugar
  • 310g can whole kernel corn
  • 4 cup cooked rice
  • 1 cup frozen peas
  • 1 cup grated cheese

Instructions

Heat oil in a saucepan and gently cook the onion. Add the tomatoes, stock powder, salt, pepper and sugar. Simmer 5 - 7 minutes. Drain the corn and mix with the rice and peas. Spread this in an oven-proof dish. Add the hot tomato mix over the rice and sprinkle with cheese. Bake at 180 C for 30 minutes.
