Who doesn't love a big hearty meal after a hard day's work? This delicious jambalaya recipe is packed with bacon, ham, and sausage. Bring the Cajun flavors to your dinner table and try this smokey, filling meal.

Ingredients

  • 2 bacon strips
  • 3 Italian sausages or kielbasa, sliced
  • 1 cup ham, cubed
  • 1 cup American rice
  • 2 tablespoon cajun seasoning
  • 1 celery rib, chopped
  • 1/2 large green pepper, chopped
  • 1/2 large onion, chopped
  • 1/2 cup carrots, chopped
  • 2 teaspoon fresh thyme leaves
  • 1 garlic clove, chopped
  • 1 lemon, juiced and zested
  • 1/4 cup parsley
  • 3 tablespoon extra virgin olive oil
  • 2 cup water
  • salt to taste

Instructions

  1. In large deep skillet on medium high heat add a little olive oil and bacon and crisp them up.

  2. When bacon is crispy remove it from the skillet and add sausages and ham. Crisp them as well.

  3. When sausages and ham are caramelized remove them and add celery, green pepper, onion and carrots.

  4. Let them caramelize for about 5 minutes or until they get color.

  5. Add cajun seasoning and mix it well into the oil, then add rice and mix it with the oil as well. Add fresh thyme leaves, garlic, parsley, lemon juice, lemon zest and mix well.

  6. Cover everything with water, mix and pop the lid on. Let it boil for 5 minutes, close the heat and let it stand for 20 minutes.

  7. Fluff the rice with fork, garnish with crumbled bacon and parsley on top and serve!
