Ingredients

  • 1 cup yellow or white cornmeal
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/4 cup butter or margarine
  • 3 eggs, separated

Instructions

  1. Preheat oven to 350 degrees F. Grease or oil a shallow 2 quart pan.

  2. Mix cornmeal, sugar, baking powder and salt in a medium saucepan. Stir in the milk and cook over a medium heat until milk is absorbed, which only takes a few minutes. Stir gently but constantly to prevent the mixture from catching on the bottom of the saucepan.

  3. Remove from heat. Stir in the butter and the slightly beaten egg yolks.

  4. Beat the egg whites until stiff peaks form. Fold into cornmeal mixture and turn it all out into the prepared 2 quart pan.

  5. Bake for 35 minutes, or until puffed and golden.
