Ohsawa Bread

Ingredients

  • Mix 4 parts flour, 2 parts polenta, 2 parts chestnut flour, and
  • two parts buckwheat flour. Add a little oil and some raisins.
  • Knead gently with water. Oil pans, fill with a little dough, brush
  • with egg, and bake in oven. For sick people mix buckwheat flour,
  • wheat flour, polenta, millet flour, etc., without chestnuts or
  • raisins. Because no baking powder is used, this bread will not be
  • soft and light, but it is tasty when chewed well.
