Ranger Oatmeal Cookies

Ingredients

  • 1/2 cup peanut butter
  • 1/2 cup margarine, softened
  • 2 cup brown sugar, packed
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 3/4 cup flour
  • 2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 cup pecans, chopped
  • 1 cup flaked coconut
  • 1 1/2 cup Quaker Oats
  • 1 cup chocolate morsels

Instructions

  1. Cream peanut butter and margarine in a large mixing bowl. Add brown sugar gradually, mixing well. Beat in vanilla and eggs.
     
  2. In a seperate bowl, mix together flour, soda and salt, and then add to creamed peanut butter mixture.
     
  3. Add oats, pecans, coconut, and chocolate morsels, and mix thoroughly.
     
  4. Drop by heaping spoonfuls on a greased cookie sheet. Bake at 350 degrees F for 11-12 minutes.
