Sweet Coconut Rice Pudding

Looking for easy rice pudding recipes? This Sweet Coconut Rice Pudding is a fresh spin on the classic dessert. With refreshing coconut milk, this dessert will take you right to the islands of Hawaii.

Ingredients

  • 3 ounce short grain rice
  • 1 pint coconut milk
  • 1/2 pint milk
  • 1 strip lime rind
  • 2 ounce caster sugar
  • 2 tablespoon butter
  • pinch ground star anise

Instructions

  1. Preheat oven to 325 degrees F.
     
  2. Mix the rice with the coconut milk, milk, lime rind and sugar.
     
  3. Pour the rice mixture into a lightly greased 2 1/2 pint shallow ovenproof dish and dot the surface with a little butter.
     
  4. Bake in the oven for about 30 mins. Remove and discard the lime rind.
     
  5. Add the star anise stir well and return to the oven.
     
  6. Cook an additional 1 to 2 hrs or until almost all the milk has been absorbed by the rice and a golden brown skin has formed on the top of the pudding. Serve warm or chilled, with fresh or stewed fruit.
