Spotted Dick

Ingredients

  • 5 ounce self-raising flour
  • 1/2 tsp salt
  • 5 ounce fresh breadcrumbs
  • 5 ounce shredded suet
  • 3 ounce caster (berry) sugar
  • 8 ounce currants
  • 1/4 pint

Instructions

Mix together flour, salt, breadcrumbs, suet, sugar and currants in a large bowl. Gradually add enough milk to make a soft but not sticky dough, using a knife to mix the dry ingredients into the liquid. Form the dough into a roll on a floured surface. Wrap in greased grease-proof paper with a pleat in the top to allow room for the dough to rise. Wrap the roll loosely in foil, allowing room for expansion, and seal the joins tightly to keep water out. Place in large pan of boiling water, cover and simmer for 2 hours. Remove from the heat, unwrap carefully and roll the pudding off the paper on to a warmed serving plate. Serve hot in slices with pouring custard. NOTES: Raisins may be used in place of the currants. The same dough may be used to make Jam Roly Poly. All non fluid measures are by weight, an Imperial pint is 20 fl. oz. (about 2 1/2 cups).
