Sweet Potatoes

Ingredients

  • 3 large or 4 med. sweet potatoes
  • 1 C. water
  • 2 tbs. margarine
  • 1/2 C. or more orange juice
  • 3/4 cup well-drained crushed pineapple
  • dash of salt

Instructions

Wash, peel and quarter potatoes. Place on rack in cooker with the water. Cover and cook 6 min after control jiggles (15 LB pressure ). Reduce pressure at once.(under cold water). Remove cover and drain potatoes. Add margarine and mash. Stir in orange juice and blend, then add pineapple. Lightly salt to taste. Add more juice or pineapple, if needed to give desired consistency. Makes 4 serv. Variation: Add 2 tbs. flour to mixture and form into 3 in. balls. Dip into beaten egg and roll in 1 C crumbled corn flakes. Deep fry until golden brown. Good with turkey & trimmings.
