"A layered burrito bowl with Mexican style shredded beef, barbacoa, on top of rice, and black beans, topped with diced peppers, jalapenos and cilantro. The beef is a chuck roast and it's cooked in the Instant Pot or pressure cooker along with Mexican spices, tomatoes and green chiles until it's fork tender. The best part about this dish is that it's customizable. Serve the barbacoa on tacos, burritos or in tamales. Or, if you make it a bowl, add your favorite toppings like cheese, sour cream or guacamole."

  • 3 pound chuck roast
  • 7 ounce diced green chiles
  • 15 ounce petite diced tomatoes
  • 1 medium lime, juiced
  • 1 medium orange, juiced

  • 1 teaspoon garlic powder
  • 1 teaspoon beef bouillon
  • 1 cup water
