Yellow Tomato Marmalade

Ingredients

  • 3 1/4 cup chopped, peeled, ripe tomatoes
  • 1/4 cup fresh lemon juice
  • grated rind of 1 large lemon
  • 6 cup sugar
  • 1 bottle liquid fruit pectin(6 oz)

Instructions

Place chopped tomatoes in small pan and set over low heat and cover. Do not add any water. Bring to boiling reduce heat and simmer about 10 minutes, stirring frequiently. Remove from heat and measure out 3 cups ofthe tomatoes and liquid. In a large kettle, combine the 3 cups tomatoes witht he lemon juice, grated rind and sugar. Stir over moderate heat until boiling. Boinl hard 1 minute. Turn off heat and add pectin. Stir for 5 minutes. Pack in hot sterrilized glasses and process. About 1 1/2 pints.
