Watermelon Preserves

Ingredients

  • Cut all red meat from rinds, then peel all outer skin from rind.
  • Cut rind into small cubes and soak in lime water overnight. Next
  • morning, thoroughly wash lime water out. Cover rinds with water
  • and cook for 15 minutes. Drain and wash thoroughly again. Chill
  • rinds with ice cubes; weigh rinds and mix pound for pound with
  • sugar (equal weights of rinds and sugar). Add 2 sliced lemons and
  • sufficient water to cook slowly for about 3 hours or until rinds
  • become clear. Seal in sterilized jars.
