Starfruit Jam

Ingredients

  • The fruit must be properly ripe. Cut off and discard the sharp
  • edges of the fruit. Cut into slices about three quarters of an inch
  • thick. For two and a half pounds of fruit add one and a half pints
  • of water. Boil until tender, about 15 minutes. Add 1 1/2 pounds of
  • sugar (suggest 1 pound then test for sweetness). Add juice of 2
  • lemons and a teaspoon of salt. Boil until jam jells. Test at 15
  • minutes.

Note: The small seeds are considered to improve the flavour.
