Pumpkin Preserves

Ingredients

  • 5 pound pumpkin
  • 4 pound sugar
  • 3 lemons
  • 1 orange

Instructions

Peel pumpkin and cut in cubes, discard seeds (or toast in oven) and inner pulp. Add sugar and let stad overnight in refrig. Put lemons and orange through grinder, discard seed. Add to pumpkin and stir over low til boiling. SImmer 3 hours, stirring frequently. Seal in jars and process.
