Half Sour Dills

Ingredients

  • 12 pickling cukes
  • 1 large clove garlic
  • 6-8 sprigs fresh dill
  • 1/4 tsp dill seeds - optional
  • 1 tsp pickling spices
  • 1/4 cup pickling salt
  • 1/4 cup white vinegar
  • 2 1/2 quart water

Instructions

Pack cukes, dill and spices into crock or other container that will allow 2 inches between the cukes and top of container. Bring salt, vinegar and water to a boil and boil 2 minutes. Pour brine over cukes. Weigh down with plate. Brine should be 1" above cukes. Keep at room temperature overnight then refrigerate. I usually let the crock sit on my counter until the cukes are pickled enough than jar up.
