Chow chow

Ingredients

  • 1 quart cabbage, chopped
  • 3 medium onion, chopped
  • 3 medium green bell peppers, chopped
  • 3 medium red bell pepper, chopped
  • 1 pint green tomatoes, chopped
  • 2 tablespoon salt
  • 1 1/4 cup sugar
  • 1 tablespoon mustard powder
  • 3/4 teaspoon tumeric
  • 3/4 teaspoon ground ginger
  • 1 tablespoon mustard seed
  • 1 1/2 teaspoon pickling spice
  • 1 1/2 pint vinegar

Instructions

Mix all vegetables with the salt. Let stand overnight. Drain and rinse. Tie pickling spices in a bag. Add sugar and spices to vinegar. Simmer 20 minutes. Add all other ingredients and simmer until hot and well seasoned. Remove spice bag. Pack and seal. Process in boiling water bath for 10 minutes.
