Choko Jam

Ingredients

  • 10 lge chokos (12 small)
  • 3 small lemons
  • 4 pound sugar
  • 2 ounce dried preserved ginger

Instructions

Cut up chokos very small, or pass through mincing machine; cut lemons into thin slices; put into non metal bowl in layers sprinkling with a little salt between each layer. Leave overnight and drain off the liquid in the morning. Put 1 and a half Cups water into preserving pan with the sugar, when it is coming to the boil add chokos lemons and ginger. Boil slowly for about 4-5 hours. Any other flavourings can be used instead of lemon (eg pineapple).
