Apple mint Jelly

Ingredients

  • 1 pkt/bottle pectin (enough for 1.2 L of liquid)
  • 600ml crisp apple juice
  • 600ml white or cider vinegar
  • 4 cup sugar
  • sprigs of mint plus 3 Tbsp chopped mint
  • food coloring (optional)

Instructions

Bring juice, vinegar, and mint (can be tied in a bundle) to a boil and boil 5 minutes. Sprinkle on pectin and stir until dissolved. Boil 5 more minutes.
