Pickled Prawns

Ingredients

  • 1 1/2 cup white wine vinegar
  • 1/2 cup water
  • 1/2 cup sugar
  • 2 tablespoon salt
  • 1 cup pearl onions, peeled
  • 2 tablespoon pickling spice
  • 6 cloves garlic, peeled
  • 1/2 tsp dried red pepper flakes
  • 1 1/2 pound cooked unpeeled shrimp
  • 1 small lemon, sliced

Instructions

In a saucepan, combine the vinegar, water, salt and sugar. Cook over low heat, stirring constantly, until dissolved. Add the onions, pickling spice, garlic and dried red pepper flakes. Bring mixture to boil. Reduce heat and simmer 5 minutes. Pack the shrimp, lemon slices, pickled onions and garlic into a large jar (or jars). Pour the pickling brine over the shrimp and marinate at least 8 hours or overnight. Keep refrigerated and eat within 5 days.
