Barroom Eggs

Ingredients

  • Hard boil a dozen eggs. Let them cool. Peel them. Put them in
  • a glass or plastic jar and cover them with apple cider vinegar.
  • Mince half a yellow onion. Throw it in the jar. Put in two
  • tablespoon of mixed pickling spice. If you want the eggs to come
  • out pink or red, throw in a small can of pickled beets. Let the
  • eggs sit at room temperature for a week; shake them gently once a
  • day.

Instructions

Note -- don't let the level of the vinegar drop below the tops of the eggs or you will have the best rotten eggs on the block. For St. Patrick's day, use green food coloring instead of pickled beets. For Cinco de Mayo use a small can of hot peppered vegetables instead of pickled beets.
