Mama's German Hot Potato Salad

If you haven't tried making a hot potato salad recipe, you don't know what you're missing. Mama's German Hot Potato Salad is a super easy side dish that will have your taste buds singing. Sure, everyone loves cold German potato salad in the summer, but the warm version will be just as popular at your next picnic or potluck. This potato salad recipe has all the flavors of a typical deli potato salad, but is served while it's still hot so the potatoes are soft and delicious and the bacon is crispy. Mama really does make it best.

Ingredients

  • 6 slice bacon
  • 2 tablespoon cornstarch
  • 1/4 cup water
  • 1 cup onion, chopped
  • 3/4 cup celery, diced
  • 2 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 cup cider vinegar
  • 6 cup red-skinned potatoes, cooked

Instructions

  1. Fry the bacon in a large, heavy skillet until crisp. Remove the bacon, drain on paper towels, then crumble; reserve the bacon fat.
     
  2. Dissolve the cornstarch in the water.
     
  3. Saute the onion and celery in the reserved bacon fat over medium heat for about 5 minutes, until the onions are translucent.
     
  4. Add the salt, sugar, pepper, and dissolved cornstarch to the skillet.
     
  5. Next add the vinegar and bring to a boil over medium heat for three minutes.
     
  6. Add the hot potatoes and crumbled bacon, stirring gently. Serve hot.
