Easy Dutch Potato Salad

With warmer weather comes outside parties and get-togethers. The next time you're invited to a summer barbeque, make this Easy Dutch Potato Salad. Your friends and family will go nuts for this simple, flavorful deli salad. The creamy egg and mayo dressing coats the soft chunks of potato. Bacon infuses the entire salad with a wonderful smoky flavor. Keep this recipe handy - once you make it, everyone will be asking you for your secret.

Ingredients

  • 8 potatoes
  • 1 stalk celery, diced
  • 2 hard-boiled eggs, sliced
  • 1 onion, minced
  • 1 tablespoon parsley, minced
  • 2 eggs, well beaten
  • 1 cup sugar
  • 1/2 cup vinegar, diluted with 1/2 cup cold water
  • 1/4 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 slices bacon, diced

Instructions

  1. Boil potatoes in their jackets. When soft, peel and dice.
     
  2. Add the celery, sliced eggs and onion.
     
  3. Fry bacon in skillet until crisp and brown.
     
  4. Beat the eggs, add the sugar, spices, and vinegar/water; mix well.
     
  5. Pour egg mixture into the hot bacon and fat and stir until mixture thickens (about 10 minutes).
     
  6. Pour above over potato mixture and mix lightly.
     
  7. Chill several hours before serving.
