Ingredients

  • 2 pound thin-cut center loin pork chops
  • non-fat cooking spray
  • 1 can (14 ounce) stewed tomatoes
  • 1/4 cup water
  • 2 tablespoon tomato paste
  • 1 can (4 ounce) chopped mild green chilies
  • chili powder to taste
  • 1 1/2 teaspoon ground cumin

Instructions

  1. Trim all visible fat from the pork chops.
     
  2. Spray large skillet with cooking spray and brown the chops over medium-high heat for about 2 minutes each side.
     
  3. Turn off heat. In a bowl mix together stewed tomatoes with juice (chop up small if necessary), water, tomato paste, chili powder, green chilies and cumin.
     
  4. Pour sauce over chops, distributing thoroughly, bring to a boil, cover and simmer on low for 25 minutes.
