Simple Pork Pot Roast

There is nothing better than enjoying perfectly seasoned and cooked oven pot roast recipes. Seasoned with oranges, cinnamon and nutmeg, the Simple Pork Pot Roast makes for a fantastic seasonal dish.

Ingredients

  • 5 pound pork roast
  • 2 tablespoon oil
  • 2 medium onions, chopped
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cup chicken broth
  • 3 tablespoon grated orange peel
  • 12 small, potatoes
  • 12 small boiling onions
  • 5 stalks celery
  • 2 teaspoon cornstarch in 1/2 cold water
  • 2 peeled and sliced oranges
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Brown roast in large pot with oil. When brown, remove and set aside.
     
  2. Pour off most of fat and discard. Put onions, garlic, cinnamon and nutmeg in pan. Cook on low heat until onions are soft.
     
  3. Push onions to one side and return meat to pan. Sprinkle with salt and pepper, add broth. Top with grated peel, Cover and simmer about 2 hours.
     
  4. About 30 minuntes before roast is done, add potatoes and boiling onions.
     
  5. When all is tender, remove roast and veggies to warm platter.
     
  6. Reduce pan juices to about one cup. Skim off fat.
     
  7. Stir in cornstarch mixture and thicken. Garnish with sliced orange and parsley.
