Marinated Pork Roast

Ingredients

  • 5 pound boneless pork loin roast, rolled and tied
  • 1/4 cup water
  • 3 Tblsp Dijon-style mustard
  • 2 Tblsp oil
  • 1 Tblsp soy sauce

Instructions

Blend together the water, mustard, oil and soy sauce. Place roast in a shallow baking dish and pierce with a fork. Brush mustard and soy mixture over top of roast, cover and allow to set at for 1 hour. Drain meat, reserving sauce. Insert spit rod through the center of the roast. Place on grill over medium-hot coals. Grill until meat thermometer registers at least 170F. It should take approx. 2 1/2 hours. Baste roast during the last 30 minutes with reserved sauce. Sauce can be heated and served with the meat. serves about 8
