Fennel is delicious and totally chutney worthy ingredient. Pounding pork breaks down muscle fibers, tenderizes the meat, and decreases the cooking time. And because the pieces are thin, the meat can be chewed easily without any resistance. "

NotesThis Pork Roulade recipe is also perfect with boneless pork shoulder. Pork shoulder meat is fattier than pork leg meat and produces very tender and succulent roasts.

Ingredients

  • 2 pound pork tenderloin
  • 4 leeks
  • 4 fennel bulbs
  • 1 cup parsley
  • 1 cup mint leaves
  • 1 cup curry powder
  • 1 tablespoon sugar
  • 2 cup ouzo
  • 6 tablespoon olive oil
  • 1 tablespoon vinegar
  1. Make a deep slit along the long side of the tenderloin to butterfly it.

  2. Cover the sliced loin with plastic wrap and pound it to 1/4" thickness.

  3. Season with salt and pepper.

  4. Slice the leeks and fennel into 1/4 strips.

  5. Slice the garlic into thin rounds.

  6. Chop mint and parsley into bite-size pieces
