Baked Pork Chops and Macaroni Creole

Ingredients

  • 4 thin shoulder pork chops
  • 1 tablespoon salad oil
  • 1 cup onions, sliced
  • 1 clove garlic, crushed
  • 1 pound canned whole tomatoes (undrained)
  • 1/2 teaspoon thyme, dried
  • 1 bay leaf, crumbled
  • 3/4 teaspoon salt, or to taste
  • 1/8 teaspoon pepper, ground
  • 2 cup cooked elbow macaroni

Instructions

  1. Wipe pork chops with damp paper towel, trim excess fat.
     
  2. Place on rack in broiler pan, broil on both sides until nicely browned.
     
  3. Preheat oven to 350 degrees F.
     
  4. In hot oil in a large, ovenproof skillet, sauté the onion and garlic, stirring occasionally, until tender, about 5 minutes.
     
  5. Add tomatoes, thyme, bay leaf, salt, and pepper and mix well.
     
  6. Add cooked macaroni to tomato mixture, mix well.
     
  7. Arrange chops on top and bake, covered, for 40 minutes or until chops are tender.
