Asian Inspired Pork Meatballs

"These Asian inspired pork meatballs were a super hit for us! Love the taste of ginger with the sweet and spicy Asian sauce. Delicious and easy to make, fast enough for a weeknight dinner that the whole family will enjoy, and not to mention very economical. I’ve served these over a bed of rice and then spooned the leftover sauce on top. I have pork but you could substitute it ground turkey or chicken if you don't eat pork."

Ingredients

  • (1-pound) ground pork
  • 1 cup Panko breadcrumbs
  • 2 tablespoon freshly chopped parsley
  • 2 cloves of garlic (minced)
  • 1 teaspoon cloves of garlic (minced)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili garlic sauce
  1. In a bowl, mix all of the ingredients for the meatballs.

  2. Using a 1/4 cup measure, form the meatballs and place them on a cookie sheet lined with parchment paper.

  3. Bake in a preheated oven at 400F for 15 minutes.

  4. Turn the meatballs onto the other side and continue baking for another 15 minutes.

  5. While the meatballs are cooking prepare the sauce.

  6. In a large pan, mix all of the ingredients for the sauce.
