Potato Soup

Ingredients

  • 9 slices rindless smoked bacon diced
  • 2 large cloves garlic crushed
  • 1 leek sliced
  • 1 1/2 pound potatoes cut into 1 in cubes
  • 3 3/4 cup stock such as beef, veal or chicken
  • salt and freshly ground black pepper
  • 2 tbsp chopped fresh parsley or dill

Instructions

Place the bacon in a large heavy based saucepan and heat gently until the fat runs. Add the garlic and leek and cook, stirring occaionally, until the leek is slightly softened. Stir in the potatoes and stock, then add some seasoning. Bring to the boil and cook at a good simmer, witht he pan half covered for about 15 mins. The soup is ready when the potatoes are just begining to break up give it a good stir and the liquid will thicken slightly but there should still be pieces of potato left. Sprinkle in the parsley or dill and serve at once.
