Polish Babka (placek)

Ingredients

  • 1/2 cup warm water
  • 1 Tbsp sugar
  • 1 Tbsp flour
  • 3 packages of dry yeast
  • 1 cup milk
  • 1/2 lb. butter
  • 6 eggs, well beaten
  • 1 cup sugar
  • 1 cup flour
  • 1 teaspoon salt
  • 1 teaspoon orange flavoring
  • 6-7 cups flour
  • 1 cup raisins

Instructions

Combine water, sugar, flour and yeast, and leave to rise. Warm milk and butter in a small pot. Beat together eggs, sugar, flour, salt and orange flavouring. Add the milk mixture and the yeast mixture from above. Add 2 more cups of flour. Beat well. Add another 4-5 cups of flour, and raisins, And beat some more. Turn into a large bowl and cover and let rise for about an hour. Knead and cut into 4 parts: put each into a loaf pan. Let rise one more hour (at halfway, brush with slightly beaten egg white, and sprinkle with crumb mixture). Bake at 350 F for 35 minutes. Crumb Mixture 1 cup flour 1 cup sugar 1 egg yolk 1/4 lb. butter 1 tsp. grated orange rind 1/2 cup bread crumbs Combine. This came from my Great-Grandma and has been enjoyed for several years in our Polish family.
