Rhubarb Cobbler with Grated Pecan Topping

Ingredients

  • 1/3 cup sugar
  • 1 1/2 cup chopped rhubarb
  • dash cinnamon
  • 1/2 cup water
  • 1/3 cup flour
  • 2 Tbsp sugar
  • 1/2 cup baking powder
  • 2 Tbsp pecans, grated
  • 1 1/2 tbsp butter
  • 2 Tbsp milk

Instructions

Preheat oven to 400 degrees F. Mix sugar, rhubarb, cinnamon and water in a saucepan. Bring to boil and cook 2 minutes more while stirring. Pour into an oven-proof glass casserole-type dish. Combine flour, sugar, baking powder, and grated pecans in a mixing bowl. Cut the butter into this dry mixture. Stir in the milk. Form into patties and float on top of rhubarb mixture. Bake in oven for 25-30 minutes.
