Lemon Tart Filling

Ingredients

  • 2 egg yolks
  • small piece butter
  • juice of large lemon
  • 1 dessertspoon cornflour
  • 1 cup sugar
  • 1 teaspoon grated lemon rind
  • 1 heaped dessertspoon full custard powder.

Instructions

  1. Mix all ingredients and stir in 1 cup of boiling water, and keep stirring on stove until thick (use a wooden spoon).
     
  2. When cool spread in pastry case. Beat egg whites with a pinch of salt and cream of tartar, add little sugar spread on top. Brown lightly in oven.
