Gooey Amish-Inspired Molasses Crumb Pie

Ingredients

  • 1 cup molasses
  • 2 cup boiling water
  • 1 egg
  • 1 teaspoon baking soda
  • 1 cup brown sugar
  • 2 unbaked 9" deep-dish pie crusts
  • FOR CRUMB MIXTURE:
  • 2 cup flour
  • 1 cup brown sugar
  • 1/2 cup shortening
  • pinch of salt

Instructions

  1. Preheat oven to 375 degrees F.
     
  2. Beat egg slightly. Add 1 teaspoon baking soda and 1 cup brown sugar.
     
  3. Stir in molasses and boiling water.
     
  4. Put egg mixture in refrigerator and chill while making crumb mixture.
     
  5. To prepare the crumb mixture, combine 2 cups flour, 1 cup brown sugar and 1/2 cup shortening and mix until fine crumbs form.
     
  6. Alternate pouring crumbs and egg mixture into one of the unbaked pie shells, starting and ending with crumbs.
     
  7. Bake for 35 minutes.
