Ingredients

  • 2 cup all-purpose flour
  • 1 teaspoon salt
  • 1 cup frozen butter
  • 1 cup cold water
  • 32 ounce peaches
  • 1 cup sugar
  • 4 tablespoon butter
  • 1 tablespoon lemon zest
  • 1 bunch fresh thyme
  • 2 tablespoon cream sherry

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Mix the peaches with the sugar, butter, zest herbs and sherry, then set aside.

  3. For the crust, sift the dry ingredients into a bowl.

  4. Grate butter into dry ingredients and combine.

  5. Sprinkle water over the mixture and mix into a dough

  6. Form the dough into a ball and let the dough rest for 15 minutes.

  7. Roll out the dough so it’s longer than needed on all four sides.

  8. Line the bottom and sides of the pie pan with dough.

  9. Pour in peach mixture.

  10. Arrange crust over the top of the pie.

  11. Bake for 40 minutes.
