Ingredients

  • 10 large eggs
  • 1 cup whole milk
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 cup chopped fresh arugula
  • 1 cup shredded Yukon gold potatoes
  • 1 cup grated Gruyère cheese
  • 1 cup grated cheddar cheese
  • 10 ounce chopped cooked sausage
  • 1 cup chopped fresh chives

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.

  2. Lightly grease a 9x13-inch baking dish.

  3. Place the eggs in a large bowl and whisk until fully beaten.

  4. Whisk in the milk, salt, and pepper.

  5. Add the milk, salt, and pepper, and whisk until frothy.

  6. Mix in shredded potatoes, chopped arugula, grated cheese, chopped sausage, and chopped chives.
