Classic Vintage Cobbler

Ingredients

  • 5 cup peaches (peeled and sliced) or berries
  • 1 cup sugar
  • 3 tablespoon flour
  • 3 tablespoon butter or margarine
  • 2 cup all purpose flour
  • 2 tablespoon sugar
  • 4 teaspoon baking powder
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1/2 cup butter or margarine
  • 1/2 cup buttermilk

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. Toss the fruit or berries with sugar and pour into a well greased 1 1/2 quart oblong baking dish.
     
  3. Sprinkle about 3 tablespoons of flour over the fruit and dot with butter or margarine. Set aside.
     
  4. Sift together into a bowl flour, sugar, baking powder, salt and cream of tartar.
     
  5. Cut in the butter or margarine with a pastry blender or fork until the mixture resembles coarse meal.
     
  6. Add buttermilk, mix lightly and form dough into ball.
     
  7. Roll the dough out 1/4 inch thick on a floured board.
     
  8. Cover fruit-filled baking dish with the dough, trimming the edges. Cut a vent in the center of the dough, sprinkle extra sugar on top, if desired.
     
  9. Bake about 40 minutes or until crust is golden brown.
