Annie's Amish Raisin Pie

Everyone will be sure to love Annie's Amish Raisin Pie. This authentic Amish recipe is one of the easiest pie recipes from scratch that makes a great dessert for summer gatherings and family dinners.

Ingredients

  • 2 cup raisins
  • 2 cup cold water
  • 1 1/2 cup sugar
  • 4 tablespoon flour
  • 2 eggs, separated
  • 1/4 teaspoon salt
  • 4 tablespoon melted butter
  • 1 tablespoon vinegar or lemon juice
  • 1 9 inch baked pie shell

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. In a saucepan combine raisins, 1 1/2 cup water and 1 cup sugar and bring to a boil.
     
  3. Combine the remaining 1/2 cup water and 1/2 cup sugar, plus flour, egg yolks, and salt; add to raisin mixture.
     
  4. Cook until thickened, stirring constantly.
     
  5. Remove from heat and add butter and vinegar or lemon juice. Pour mixture into baked pie shell.
     
  6. Cover with whipped cream or meringue (see below). Bake until golden brown, about 10 minutes.

Meringue:

  1. Beat egg whites till stiff peaks form. Gradually add 2 tablespoons sugar while beating.
     
  2. Pile on top of pie and bake until golden brown, about 10 minutes.
