Amish Sugar Cream Pie

I love making pie recipes from scratch and this Amish Sugar Cream Pie was so easy to make. I'm a huge fan of Amish recipes and this one really sealed the deal for me. I a sucker for creamy pies though.

Ingredients

  • 3/4 cup granulated sugar
  • 2 1/2 cup half-and-half
  • 1/8 teaspoon salt
  • 1/4 cup brown sugar
  • 1/4 cup cornstarch
  • 1/2 cup butter, cut up
  • 1 teaspoon vanilla
  • 1 (9-inch) lightly baked pie crust
  • 1/8 teaspoon cinnamon

Instructions

  1. Preheat oven to 325 degrees F.
     
  2. In a medium saucepan, combine granulated sugar, salt and the half-and-half.
     
  3. Bring to boiling, stirring occasionally. Meanwhile, in another saucepan, combine brown sugar and cornstarch.
     
  4. Gradually whisk in hot half-and-half mixture.
     
  5. Add butter; over medium heat, cook mixture, whisking constantly, 5 minutes or until boiling and thickened. Simmer 1 minute.
     
  6. Remove from heat and stir in vanilla. Pour into prepared pie shell; sprinkle with cinnamon.
     
  7. Bake 20 minutes or until top of pie is golden.
     
  8. Place on wire rack; pie filling will be very loose but will thicken on cooling. Must be cooled completely before slicing.
