Ole Bollen

Ingredients

  • 2 pkg. yeast
  • 3/4 c. sugar
  • 1 1/2 teaspoon salt
  • 4 eggs
  • 6 c. flour, sifted
  • 3 Tbsp. oil
  • 1 teaspoon cinnamon
  • 1 medium orange rind, grated
  • 2 Tbsp. lemon juice (juice of 1/2 lemon)
  • 2 c. currants
  • 3 c. milk
  • 1/2 teaspoon lemon extract
  • 1 teaspoon vanilla

Instructions

(Ole Dutch Treat). Dissolve yeast in 1/4 cup warm water. Beat eggs. Scald and cool milk. Combine milk, eggs, oil, sugar, salt, yeast, vanilla and lemon juice in a large mixing bowl. Sift in 2 cups flour. Beat thoroughly. Add currants, orange peel and finely chopped candied fruit (optional). Add flour to make a thick batter. Let the batter rise until doubled. Drop large spoonfuls of dough into hot oil (use a deep fryer). Cook like a doughnut, until brown. Drain on a paper towel. Sprinkle with powdered sugar.
