The Best Weeknight Linguine

Ingredients

  • 1 pound linguine
  • 2 1/2 cup diced tomatoes
  • 2 1/2 cup whole baby clams
  • 1 1/2 cup dry white wine
  • 3/4 cup diced onion
  • 3 tablespoon minced garlic
  • 1 1/2 teaspoon red pepper flakes
  • 1/3 cup tomato paste
  • 1/3 cup olive oil
  • 3 tablespoon finely chopped parsley
  • 1 teaspoon salt

Instructions

  1. Fill large cooking pot half way with water and bring to boil. Add linguine and continue boiling until pasta is nearly done. Remove from heat; drain and set aside.

  2. Coat the bottom of a large skillet with olive oil and warm over medium heat. Add diced onion and sauté for approximately 3 minutes.

  3. Add garlic and red pepper flakes; simmer for about a minute. Add white wine and tomato paste; continue simmering for 5 minutes

  4. Add diced tomatoes, clams and salt; simmer for another minute or two.

  5. Finally, add cooked linguine, parsley and olive oil; toss until well combined. Serve immediately.
