Ingredients

  • 3 tablespoon olive oil
  • 4 clove garlic
  • 1 ounce anchovy fillets
  • 29 ounce canned whole plum tomatoes
  • 1 cup pitted black olives
  • 2 tablespoon capers
  • 17 ounce spaghetti
  • 1 cup chopped fresh parsley
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon red pepper flakes

Instructions

  1. Bring a pot of water to boil and add salt.

  2. Warm 2 tablespoons of oil with chopped garlic and anchovies in a skillet over medium-low heat.

  3. Cook and stir occasionally until garlic is lightly golden.

  4. Add tomatoes and crush with a fork.

  5. Raise heat to medium-high and cook and stir occasionally for 10 minutes.

  6. Stir in olives, capers, red pepper flakes, and continue to simmer.

  7. Cook pasta until it is tender but not mushy.

  8. Toss with sauce and remaining tablespoon of oil.

  9. Taste and adjust seasonings as necessary.

  10. Garnish with chopped parsley.
