Pear and Gouda Macaroni and Cheese

"This is a traditional macaroni and cheese dish with some heavy twists. Instead of cheddar cheese, we are going to be using Gouda. A nice pair with Gouda cheese is pears, so we are going to bring some zing to this traditional favorite. This recipe is cooked much like a traditional mac and cheese, but with our flavor components switched out. Additionally there is a homemade breadcrumb recipe linked to that really adds some crispiness that this recipe needs."

Ingredients

  • 2 Pears, cored and diced
  • 4 cup shredded gouda cheese
  • 2 cup Whole Milk
  • 2 cup Dry macaroni
  • 4 tablespoon Butter
  • 3 cup Bread Crumbs
  • 1 tablespoon Fresh chopped rosemary
  1. Preheat oven to 350

  2. Core and dice pears

  3. Cook macaroni as directed on package, but only cook for about 80% of the directed time - it will be finished in oven

  4. While macaroni is cooking, in large saucepan melt butter on low

  5. When butter is fully melted, slowly start sprinkling flour in the pan and continuously mix. The idea is that the mixture of flour and butter will form almost a paste.

  6. Pour in just a little of the milk and whisk until smooth. Keep on repeating until all milk is blended in.
