Ingredients

  • 12 ounce gluten free penne, rotini, or other small pasta of choice
  • 2 cup broccoli florets
  • 1 medium pepper, chopped
  • 1 onion, chopped
  • 1 cup kalamata olives
  • 1 cup nutritional yeast or parmesan cheese (optional)
  • salt & pepper to taste
  • 2 cup plain hummus (for Hummus Dressing)
  • 1 tablespoon olive oil (for Hummus Dressing)
  • 1 tablespoon water (for Hummus Dressing)
  1. Cook your gluten free pasta according to directions and desired consistency. Let it cool.

  2. In a large bowl, combine broccoli, pepper, onion, olives, cheese and salt and pepper. Pour in the chilled pasta, dressing and mix.
